An ultimate choice for the avid BBQ or smoker enthusiast! The brisket is also great cooked low and slow in an oven or slow cooker. We have sizes typically varying from 3-7 lbs, however, sometimes we will have a whole "Packer" brisket at a massive 9+ lbs!
**Briskets are cut in half into a point and a flat, the top or bottom half. If you would like to request a certain cut, please include a note with your order. Requests will be accommodated as long as the cut is in stock, but if not the alternate cut will be sent!
The chuck tender is a small roast that comes from the chuck shoulder area of the animal. Also known as a "mock tender" because it has a similar look to a tenderloin roast. It is a lean roast that is best when slow cooked.
Our artisan butcher allows us to offer several “craft” beef cuts like the Picanha. The Picanha is a very prized cut of beef in Brazil, but still relatively unknown to American butchers. This is cut out of the sirloin cap of the animal and is one you may cook as a roast or cut and skewer for the traditional Brazillian flaire!
